The story begins with the Taco Meat Seasoning and it is the star of the show. So how did JoJo pick this special mixture of 13 spices? Well as many of you know Joellen and Mike like to travel. These traveling adventures have sent them to both coasts of Mexico, Central America, South America, and the Caribbean.
They collected 6 recipes and needed to have a focus group pick the best recipe. That's where Drew Miller, the owner of WVRC Radio 104.7 in Spencer, comes into the picture. In January, 2023, Drew invited Joellen and Mike Greenlee to a Superbowl party at his home. Joellen asked if he had made arrangements for food and at that time he had not. Joellen gladly offered her 6 taco recipes with all the fixins, for a blind taste test.
Joellen's plan was to have the football fans vote on the best recipe and whichever one had the most votes, it would win. Well to her surprise the winner was unanimous. Recipe number 5 received all of the votes. Of course it was the most difficult to make but the flavor was a crowd pleaser.
Then came the daunting task of finding a company that could mix her special mixture of spices. She looked all over the United states for just the right spice company with no success. As luck would have it, Anthony "Tank" Blosser, one of the owners of Spencer CashSaver. Asked Joellen to a food show in Ohio. No one there had the ability to mix the unique spice, but a vendor knew a company that may be able to help.
A spice company from, believe it or not, our neighboring state of Pennsylvania could provide the mixture. This company could mix it to Joellens exacing specifications. Joellen wanted the spice mixture to only contain the raw spices with no preservatives and without anti-hardening chemicals. Subsequently her spices contain nothing that you can not spell. Hard to believe in today's world but true.
The company also packaged a portion of her spices for purchase by her culinary fans. If you combine 1/3 of a cup of her spices with 1 pound of browned ground beef and a little bit of water it is exactly how it is prepared in JoJo's Taco Trailer. There is no need to saute it for a long period of time because the meat accepts the spices right away.
For those with stomach issues, most of JoJo's customers do not have adverse reactions to her tacos. Her spices contain "Ginger" to assist in digestion. A well known digestive spice.
But that's not all. Another huge part of JoJo's food success is the vegetables contained in her food. When possible, the vegetables are raised in Mike's high tunnel, AKA greenhouse, in Roane County, WV.
The Pico de Gallo is also a star of that same show. Our friend John Pena, owner of Pena's Barber Shop in Spencer, was also at that same Superbowl party and suggested more garlic to the Pico. John said that it would provide a more authentic Mexican flavor. John was exactly right. With that little adjustment, he then claimed that we were spot on.
The Pico de Gallo is a mixture of mostly tomatoes. A few green peppers, a couple onions, and JoJo's other secret ingredients. It is similar to a thick salsa.
JoJo's decided that chicken needed to be added to the menu. So Superbowl 2024 she did a repeat, but with chicken. Of course WVRC owner Drew Miller was up for the new challenge. This time she presented the Superbowl crowd with five choices. The crowd placed their vote on our winning chicken recipe. They have proven to be right again. She now has rave reviews from her regular customers.
